For the love of eggplant

Use this recipe for your next get together - football anyone?


To make 2 generous servings, I used:

1 eggplant
2 tbsp olive oil
1/2 avocado
3 oz feta cheese
2 oz olive tapenade
basil leaves for decoration

optional toppings: tomato salsa, caramelized onions, pine nuts, walnuts, pesto sauce, sour cream
