Hubert Keller’s Crab & Avocado Sphere with Watermelon Gazpacho

  • 3 cups watermelon, cubed
  • ¼ teaspoon salt
  • 1/4 tsp crushed red pepper flakes
  • 2 teaspoons white Balsamic vinegar
  • ½ cup lump crab meat
  • 1 tablespoon English cucumber, finely diced
  • 1 teaspoon Italian flat parsley, finely chopped
  • 1 tablespoon red bell pepper, finely diced
  • 1 tablespoon red onion, finely diced
  • 3 tablespoons lemon juice
  • ¼ teaspoon salt
  • Pinch black pepper
  • 1 avocado
  • 2 tablespoons olive oil
